Nimmakaya pulihora / Lemon rice
Hi..
Ingredients:-
1 glass raw rice
Green chillies 3
Lemons 3 (if they r less juicy)
Red chilies 3
curry leaves
chana dal 2 full tspns
urad dal 2 full tspns
mustard seeds 1 tspn
ground nuts 10 (optional)
cashew nuts 10 (optional)
turmeric powder 1 and half tspn
salt to taste
Oil 3 tspns
Preparation:-
- wash the raw rice well and cook it normally..the rice should not be messy..each rice should be separated..so do not add extra water to rice.
- Remove the cooked rice to a wide plate to let it cool down… spread the rice evenly in the plate for 5 minutes.
- Heat the oil in the frying pan…reduce the flame to sim.
- when the oil is hot is enough add red chillies,mustard seeds,chana dal,urad dal and fry till mustard seeds starts popping up..
- Now add the green chillies,ground nuts and cashews n fry them till the cashews and ground nuts are fried (just for 1 minute or so)
- now add curry leaves ,and turmeric powder sauté for 10 seconds and off the flame…add enough salt in the Seasoning (talimpu)..squeeze the lemons also into the seasonings…stir it well and pour the whole thing in the cooked rice..
- Mix the rice well..so that rice gets gets colored and absorbs all the color ,sourness and salt from the oil…Adjust the salt and lemon juice if necessary..
Note:-
Lemon juice can be squeezed either in the seasoning or in the rice
Lemon juice and other ingredients are adjust based on the amount of cooked rice
