chikkudukaya toamto kura / indian broad beans and tomato curry
Hi..
serves : 4 persons || cooking time: 20-30 mints || cuisine: Andhra
INGREDIENTS:-
Chikkudukayalu 1 kg
Tomatoes 3
Onion 1,medium size
Green chilies 2 or 3 (based on the spiciness of chilies)
curry leaves few
turmeric powder 1/4tspn
salt n red chili powder to taste
TADKA/TALIMPU/SEASONING:-
Oil 2tspns
dry red chili 1
garlic cloves 2 , crushed
cumin seeds 1/2 tspn ( jeela karra/jeera)
mustard seeds 1/2 tspn (avalu)
chana dal 1 tspn
urad dal 1tspn
salt as required
turmeric powder 1/2 tspn
red chillli powder as required
PROCEDURE:-
Remove the side strings by just peeling it off by hand and cut them into half's shown in figure.
Chop the tomatoes.
Heat oil in a skillet , when the oil is hot enough add crushed garlic cloves and saute it for few seconds..now add the remaining tadka ingredients and saute till the mustard seeds starts popping.
Now add the chopped onion, green chillies and curry leaves and saute till onions becomes transparent (half cooked)
Now add the chopped chikkudikaya pieces, chopped tomato and mix it well, now add enough salt, turmeric powder and red chilli powder and mix it well..cover it with lid n let it cook for 5 seconds on medium flame..now reduce the flame to sim to medium n let it cook till the curry is done. add little water if required..adjust the spices if required n off the flame.
