Beetroot rice
Hi..
As beetroot is very good for health..i like to make deferent recipes with this vegetable..but my hubby wont like this vegetable..so i thought of making some thing different so that he will say Wow..I searched in net for the recipe of beetroot rice…but did it in my own way…it came excellent..n i succeeded by my hubby saying Wowww!..by tasting it.. 🙂
In my recipe i didn't add mustard n cumin seeds..coz i don't like much in rice recipes..but my mom says cumin seeds are good for health n not to don't avoid them.
Ingredients:-
Rice 2 cups of raw rice
Beet root 2
Green chillies 3
Green peas 1/2 cup
Sweet corn 1/2 cup (optional)
Grated coconut 1/2 cup
Broken cashews 3 tspns
Chana dal 2 spoons
Oil/Ghee 3 tspns
Salt to taste.
Preparation:-
Cook rice in the normal way..Once the rice is done..spread it on a wide plate so that it will get cool soon..the rice should not be sticky..for any rice item..rice cooker is the best way to cook rice as the rice wont become sticky in that.
Peel the skin of the beetroots n grate them well.
Heat oil /Ghee in the wide pan.
when the oil is hot enough add chana dal and cashews..saute them till they r fried on low flame..do not burn them..now add chopped green chillies saute for 10 seconds n add green peas,sweet corn and sauté for half minute…stir them continuously so that the cashews wont burn..Now add grated beetroot n enough salt ,saute for 5 to 10 mints till the beet root looses it raw smell..after adding beetroot the stove can be increased to sim to medium…take care not to burn the beetroot..keep stirring frequently…now add grated coconut n suate for 2 minutes…
Add the cooked rice..Mix it well…n sauté for 5 to 10 mints…Off the flame n serve hot/warm with onion Raitha.
Note:-
From the above ingredients , green peas ,grated coconut n sweet corn r available as frozen.
