NUNE GONGURA
Hi
Ingredients:-
- Gongura 1 bunch
- Onion 1 big
- green chillies 3 to 4
- curry leaves few
- Oil 1/2 cup (preferably sesame seed oil / nuvvula nune)
- red chilli powder 1/2 tspn (add as per the spice level u eat)
- turmeric powder 1 tspn
- salt as per taste
for talimpu /tadka/seasoning:-
- mustard seeds 1/2 tspn
- cumin seeds 1/2 tspn
- red chillies 2 or 3
- chana dal (pachi senaga pappu) 1 tspn
- urad dal ( minapappu) 1 tspn
- garlic cloves 2 or 3.
Procedure:-
- Pluck the gongura leaves from the stems..wash them and chop little if they r too big n dry them..make sure they r not wet before cooking.
- Heat oil in a kadai ..when the oil is hot enough add broken red chillies, cumin seeds, mustard seeds,chana dal, urad dal and crushed garlic cloves..saute in medium flame till the mustard starts popping out…
- now add chopped onion , green chillies ,curry leaves and saute them till onions are half cooked..
- now add the gongura leaves and fry them for a while
- Now add turmeric powder,salt ,red chilli powder and mix well n let it cook for a while till the leaves are cooked n off the flame.
- let it cool down n store in a tight container..it will stay for 3 to 4 days with out keeping in fridge if u wont use wet spoon.
