Birakaya palu posina kura / Ridge gourd curry with milk added.

Birakaya palu posina kura is one  of my favorite curry..usually my grand ma used to make this curry in the evening..eating hot hot rice with ghee and this curry is my one of my sweet memory..this curry goes well with rice n rotis also. for this

curry the vegetable (birakaya) should be tender.

INGRIDIENTS:-

Birakayalu / Ridge gourd  - 2

 Onion  -1 medium size

Green chillies  - 4  or 5  (based on the spicyness of the chilli)

 Curry leaves  Few

Milk 1 small cup.

Talimpu /Tadka/ Seasoning:-  Oil 2tspns dry red chili 1 or 2 , broken into half

garlic cloves 2 , crushed

cumin seeds 1/2 tspn ( jeela karra/jeera)

mustard seeds 1/2 tspn (avalu)

 chana dal 1 tspn  (pachi senaga pappu)

 urad dal 1tspn  (minapappu)

 Preparation:-

  • Just peel of the hard strings of birakaya ..as we use only tender vegetable for this curry , no need to peel the entire green skin..chop the vegetable into into small pieces.
  •  chop the onions n green chillies Heat oil in kadai..when the oil is hot enough reduce the flame to sim ( for tadka always the flame should b reduced for any curry) Add crushed garlic n saute for 5 to 10 seconds till u get the nice aroma of garlic..take care not to burn them..
  • now add the remaining tadka ingredients such as red chillies  ,cumin seeds, mustard seeds,chana dal n urad dal..saute till   mustard seeds crackles.
  • Now add chopped onions  green chillies n curry leaves n saute for few minutes till onions become transparent..now add 1/4 tspn of turmeric powder n mix it well n add chopped vegetables, enough salt and mix it well n cover it with lid..increase the flame to medium n let it cook till the vegetable becomes soft n cooked..Now adjust the spicess in the curry if required.
  • .if  every thing is correct add a cup of milk in the curry n mix it..do not cover with lid after pouring milk..jus let it cook for 3 to 4 minutes till the  milk boils n off the flame.

 Tips:- use only tender vegetables  to this curry. Adding turmeric powder to tadka before adding vegetable gives nice color to this curry  by mixing it with oil. Add a pinch  of cooking soda to the milk before adding milk to the curry..it helps in avoiding the milk to break its structure. Do not cover with lid after adding milk, it will break the milk. do not cook too much after adding milk. here we are not adding red chilli powder in the curry as it turn curry to red in color..as we are pouring milk add adjust spiciness in the curry with only green chillies.
