INGREDIENTS:-

For making kaja:-

Maida/All purpose flour 1 cup

oil 3 tspns

cooking soda a pinch

water (enough to make a dough like chapati dough)

Oil for deep frying

For making sugar syrup:-

Sugar 3 cups

water 2 cups ( just enough water to cover the sugar )

Preparation:-

  • Take maida in a bowladd 3 tspns of oil , pinch of soda n mix in the flour..now take enough water n mix with maida n make the dough like puri/chapati dough, cover it with wet paper towel or cloth n keep it aside till we make the sugar syrup.
  • Take sugar in a wide vessel n add water water it the sugar immerse in waterif u add more water..it will take lot of time to make the syrupkeep flame in medium to high , stir occasionally. The sugar melts in water n become thickthe syrup should nt become too thick nor too loose..make sure to off the stove before the syrup comes to one string consistency .
  • Now ..clean the surface n roll the dough with rolling pin like single chapati dough should be rolled to very thin layer.can sprinkle maida flour while rolling.
  • Now from end..simply n carefully fold the chapati like roll..sprinkle maida flour between each rolls..so that the rolls should nt stick to each othernow cut n remove the edges. now cut the roll in small 1 inch pieces now take each piece ,make a small press on the piece with thumb n roll it with rolling pin twice n keep it on a placein the same way do with all the pieces.
  • Heat enough oil in a shallow pan for deep frying ,when the oil is little hot..place all the kaja pieces placed in the place n fry them slowly n carefully till they turn to nice golden colornow remove them from oil n place in sugar syrupthe syrup should be a bit more than Luke warm in temperature ..Waite for 4 to 5 minutes n remove them to platenow add the elachi / cardamom powder in the sugar syrupheat the syrup for a minute n off the flamenow again place the kaja in the sugar syrup for the second time..by adding the kaja in the syrup for the 2nd time..the juice that is there in layers will be locked in siden also the sweets get the elachi essence ..Waite for a minute n remove the sweets from syrup n spread them on plate..so that they get cool down..
