omelet curry/attu posi kura/omelet kura
Hi..
I got this recipe from my mother-in-law.This is very simple and easy recipe..it is made quickly.The only time taking is to make omletes…the omelet will become little hard than the regular omelet coz it will cook again in the curry..but gives different and good taste.It will go well with rice and rasam and one fried curry like aloo fry.
Ingredients:-
Eggs 4
Onion 2
Green chillies 3
garam masala powder 1/2 tspn
coriander powder 1/4th tspn (optional)
turmeric powder
red chilli powder
salt to taste.
red chillies 2
cumin seeds 1/2 tspn
Mustard seeds 1/2 tspn
chana dal 1/2 tspn
urad dal 1/2 tspn
Oil (for curry and for making omelets)
preparation:-

Heat the frying pan with a tspn of oil.When the oil is hot enough break the egg in the pan and let it cook..do not flatten the omelet or beat the egg before pouring it into pan…when fried turn the omelet to the other side and Waite for a minute till the other side is also fried well..Now remove to omelet to a plate..do the same way with all the eggs.
Curry preparation:-
- chop the Onions and green chilies finely.
- Heat the heavy bottomed skillet with 2 tspns of oil..
- When the oil is hot enough add redchillies,cumin seeds,mustard seeds,chana dal and urad dal…saute till the mustard starts popping..
- Now add chopped onions and green chillies…sauté for 2 minutes in low to medium flame by covering with lid till the onions becomes soft and light dark in color.
- Now add turmeric powder,redchillipowder,salt,garam masala powder,coriander powder and a half cup of water and stir the curry well..
- Now place the omletes in the curry ..arrange the curry above and around the omletes so that they absorb the spices from the gravy.
- Cook for 5 minutes in low flame till the gravy becomes thick and off the flame.
Note:-
This curry needs more onions ..as gravy comes only by onions
We can add milk also to this curry to get good gravy
For making Onions better to use non stick pan..becoz how much oil u add the omelet will drink everything..so if on nonstick pan..we can make with less oil like 1 tspn or so.
