Jilebi

Ingridients:-

All purpose flour 1cup

Gram flour 2tsp

Jilebi color /food color/mitai (1/4tspn)

corn flour 2 tspns

Yeast 1/2 tspn

Cooking soda 1/4th tspn

Thick curd 1/2 cup

Sugar syrup:-

Sugar 2 cups

1+1/2 cup of water

1/4th tspn of lemon juice

Preparation:-

sugar syrup:-Mix 2 cups of sugar+1 and 1/2 cup of water with a 1/4th tspn  of lemon juice .Boil till the sugar dissolves and syrup becomes thick..the syrup thickness should be in one string  consistency.

Jilebi:-

Mix all purpose flour,gram flour,jilebi color, yeast,cornflour,curd,cooking soda and  make it to fine paste with out forming any lumps.The paste should be in a pouring consistency.

Take jilebi maker/cloth with small hole /plastic bag keeping small hole in the corner and make it like mehandi cone.

Now Heat oil in a shallow pan.Pour the batter into the jilebi cone and hold the nozzle  just above the hot oil and make 3 to 4 circles by sealing the end of the last circles..you can make as many as circles based on the size of ur oil pan.

Deep fry jilebis till light golden brown color..when they r done remove them and place them in sugar syrup for 2 minutes or so..till the jilebi absorbs  the syrup.When its done remove them from syrup and serve them.

Note:-

  • As we added yeast in the batter..there is no need of fermentation.
  • one sting consistency is..dip ur finger in syrup..now remove it  and join ur thumb with dipped finger and move away..if u find a string like thing between fingers..that is one string consistency..now ur sugar syrup is done.

I have tried making jilebis with priya instant mix also..its good…
