vegetable pulav /veg pulav



Veg pulav is a quick , easy and tasty rice dish..this can be made in rice cooker very well..even the bachelors can make this dish easily…

rice 2 cups (basmati rice proffered)
carrots 2
green peas 1/2 cup
potato 1
green chillies 4
onion 1
coriander leaves 5 to 10 stems
chana dal 1 1/2 tspn
broken cashew nuts 20
cumin seeds powder 1tspn
coriander powder 1 tspn
salt to taste
ghee 2 tspns
whole Masala :
bay leaves d
(n what ever masala ingredients u have..adjust the amount of garam masala ingredients to ur taste n amount of rice cook)
1.   wash rice n soak in water for 15 minutes.
2.    Chop all the vegetables: chop the onions and green chillies into long slices,peel of the potato n chop into medium cubes,chop the carrot into long n thin slices to give good look.
3     Heat ghee in a frying pan..when it is hot enough add whole masala ingredients and sauté for half minute and add chana dal and cashews and sauté till cashews turn little brown  in color..Now add chopped green chillies                    and  onions and sauté for 1 add all the vegetables and let them sauté for 2 minutes and add washed and soaked rice with out water and stir well..let it remain for 3 to 4 minutes( so that the rice will not                               become   sticky after cooking)
4.     Now transfer all these to rice cooker or other cooking vessel…add water to rice in the ratio of 1:1 1/2 ( for one cup rice add 1 and half cup of water).Add        cumin powder,coriander powder and salt..also add chopped   coriander leaves in the cooker and let it cook till the rice is done..
5.   Serve hot with Raita/aloo kurma /or with any nonveg curry

    After it was done I opened the lid to get a nice aroma, but instead I got the smell of raw spices, namely the coriander and cumin powder.
    What is your suggestion. I feel it may taste better without these spices.( coriander and cumin)
