Birakaya kodiguddu porutu /Rigged gourd with egg curry

Birakaya kodiguddu porutu /podumu is a tasty recipe...i got this recipe from my mother...we usually prefer to make this curry when there are few vegetables( birakaya /rigged gourd) or...having only one egg...then its better v make this curry ..then the curry becomes more in quantity...
ingredients:- Birakaya /rigged gourd eggs 2 onion green chillies curry leaves Tadka/Talimpu/Seasoning:- garlic cloves 2 or 3 redchillies mustard seeds 1/2 tspn cumin seeds 1/2 tspn chana dal 2tspns urad dal 1 tspn oil 2 tspns turmeric powder chilli powder salt to taste preparation:- peel the rigged gourd completely or only the rough area of the skin ..wash it and cut it into small pieces. chop the onions and green chillies. Heat oil in kadai...when its enough hot..reduce flame to sim and put crushed garlic cloves and sauté for 30 seconds until u get the nice aroma of garlic ...now add red chilies,mustard ,cumin seeds, chana dal and urad dal..sauté it until mustard pops...now add chopped onions,green chillies and curry leaves and sauté on low flame for 5 minutes.....(if the flame is low..then the onions wont get burned...while sautéing onions cover with lid ..so they turn soft)...now add chopped rigged gourd ...1/2 tspn turmeric powder,enough salt...mix it well and cover it with lid and let it cook for 10 minutes...( as the flame is low and salt is also added..water from the vegetable will be oozed out and the vegetable gets cooked in that water in low flame) now add enough chilli powder and let it cook until the vegetable becomes soft and completely cooked...when u taste the curry...it should be perfect ...you can take the curry as it is..or we can beat the eggs in the curry..stir the curry well n let it cook until the egg is cooked..(for 5 to 10 mints on low flame). that's it!...try it!...taste it..enjoy....:-)
