kova /koya / pala kova

Pala kova is  is one of the precious sweet which is liked by many..its made from milk and only milk…

My mom used to do this sweet very frequently…she does it easily ..here I share the recipe of my mom..hope this helps u

Ingredients:-

Milk and sugar should b in the ratio of 1 :3 ..I mean 1 cup of sugar for 3 cups of milk.

Milk 3 cups

sugar 1 cup

Moulds for making in to shapes (optional)

Ghee 1 spoon  (just to rub to our hands and to moulds..so that kova wont stick )

Procedure:-

In a wide pan pour milk and sugar .. let the milk boil on medium to low flame for long time..till all the water in the milk gets evaporated and it becomes thick…keep stirring while the milk is boiling..stir frequently…

By adding sugar in the beginning itself milk wont stick to bottom of the vessel…If u are near the stove then u can increase the flame n keep stirring..when u r away u can reduce it to  low flame ..

When the milk become thick..u have to b near the stove..keep on stirring continuously…so that it wont stick to bottom..once if it sticks to bottom then..while stirring the bottom layer comes up n the color of the milk changes to dark…so be careful n keep stirring..

once it become thick enough…I mean it leaves the edges of the vessel..you can check it by taking a sppon of kova..when u touch it it should not stick to your finger

Now off the flame n remove the kova to a wide plate n let it cool..when it is warm..apply little oil to hands n to kova moulds n make them into desired shapes.

Tips:

The more fat milk you take for making kova..the whiter the kova is..

Take wide mouthed vessel to finish cooking the sweet quickly

If by mistake the milk got stick to bottom n becomes dark..don’t stir it..carefully remove the milk to another vessel so that color of milk wont change to dark..now cook in new vessel.
